This was Wendye’s mother’s coffee cake recipe and it was one of the first we tried at River Spruce Cabins. As a kid, she used to fight with her cousins for the piece with the most “butter holes”. Quick Coffee Cake
- 1 Cup Sugar
- 2 Cups of flour
- 1/2 teaspoon salt
- 1/2 Cup melted butter
- 1&1/2 teaspoon baking powder
- 2 egg yolks
- 1 Cup milk
Topping
Mix:
- 1 Cup brown sugar
- 2 Tablespoons flour
- 1/2 Cup butter
- 1/2 Cup chopped pecans
Sift sugar, flour, salt and baking powder in bowl. Beat egg yolks, add milk and melted butter. Combine liquids and dry ingredients. Stirring until dry ingredients are just damp. Place in shallow pan. Sprinkle the topping over the batter.
Bake in hot oven at 425 degrees for 25 to 30 minutes
